- 240g unsalted butter
- 200g caster sugar, plus a little extra for finishing
- 1 lemon grated, (was off the wax first) and the juice
- 3 large eggs
- 210g SR flour
- 90g PL flour

Instructions
- preheat oven to 170c
- cream the butter & sugar, add lemon zest
- add eggs one at a time, with a tbsp. of flour each time
- mix in the rest of the flour & then add the lemon juice
- put in your desired tin, sprinkle with caster sugar, approx. 2 tbsp
- bake in the oven for 1 hour or until skewer comes out clean
- leave to cool in there tin before turning it out.
